Dinner conversations sometimes lasted well into the night. Fresh food could only be served in season. Sometimes food could be saved by smoking or curing. If a family wanted a chicken, they went out in the morning killed it and cooked it eating it for breakfast, lunch, and dinner before it could spoil. Cooking required using a wood fire. Individuals had to know how to manage the fire. Animal organs were considered to be delicacies. Fruits and vegetables were never served raw. Drinks were made especially sweet. Punches had lots of alcohol in them. Meat dishes often came to the table with head and feet still attached. Rolls were used to sop up sauces and gravies from the plate. Almost everyone knew how to cook black, white, men, women, rich or poor food was that important to the culture.  </p>
<p>The governors place offered the finest in colonial cooking. Their cooks were professionally trained European cooks. They were called principal cooks and were the highest paid servants. These cooks had trained apprenticeships in Europe and were the most skilled cooks in the colonies. They often kept quite a few cooks on a time for all the specialties. The cuisine for the governor had French influences. The governor boasted the best kitchen, which had numerous copper pots, a spit jack, and an eight day clock. </p>
<p>The gentry offered the next best in colonial cooking. This class had meats and sweets with every meal cooked in a more traditional English fashion. The gentry had slave cooks who were less formally trained, but none the less still quite skilled. These cooks were expensive and extremely precious. Some slaves became so skilled they earned their freedom as a result of their cooking prowess. </p>
<p>The middle class offered the basics in colonial cooking. Although this class tried to match the food offered by the gentry class on special occasions. The upper middle class could still afforded the slaves to do the cooking. The lower middle class relied on the talent of the mistress of the house. </p>
<p>The lower class offered the most basic in colonial cooking. These meals were one pot meals, because the cooking equipment was limited to one cast iron pot. The wife prepared soups and porridges. The most common was hominy, which is made from corn, added to it salt cured pork and vegetables. This was complemented with whatever meats and vegetables they could get. </p>

However, if a mix is all that is available, follow the directions on the package. Individuals should use buttermilk or buttermilk powder in the corn bread. Self rising corn meal is easier than plain corn meal which requires added leavening. Stone ground corn meal is the best of the corn meals for corn bread. For any corn meal that is being used make sure to follow the directions specifically on the package for cornbread. </p>
<p>Some other favorites of southern cooking are simple recipes to create. They are sausage dressing, fried green tomatoes, squirrel food, sorghum syrup, country ham, catfish, hush puppies, southern style pork cassuolet, and sauerkraut. </p>
<p>Southern cooking also has its favorite fruits and vegetables. Blackberries are a staple of southern cooking because they can be home grown. Blackberries are used to make jams, jellies, preserves, and cobblers. Black-eyed peas are a traditional southern dish that is eaten on New Years day for good luck. Cooking dried peas requires first a soaking in a wire sieve. Then choose a pot that will allow the peas to be covered. Place a slice of cured ham in the bottom of the pot. These greens can be cooked after being rinsed and the bad spots cut away. Place them in a pot with bacon and add water. Bring the pot to a slow boil and cook for forty five minutes to an hour. Grits are usually a breakfast meal served with butter. They also can be used in casseroles. Grits come from hominy which is corn kernels. Lima beans are also a favorite. Prepare them just like the black eyed peas. Muscadines are a fruit like grapes. They are used to make jams, jellies, preserves, and wine. Okra and sweet potatoes are also great staples to use in southern cooking. </p>

Always read through the entire recipe before beginning. This ensures that all necessary ingredients are on hand before starting. Check expiration dates on all non perishable supplies, so that running to the store happens in the middle of baking. Preheat the oven and check with an oven thermometer. Most ovens can run anywhere from twenty five degrees to cooler to twenty five degrees warmer. This ensures that the proper temperature is obtained for the recipe. Follow directions on adjusting oven racks, prepping baking sheets, and using the right baking pan. Measure ingredients accurately this means holding it up to eye level especially with liquids. To measure dry ingredients over fill then level off with flat edge of knife. Finally bake with love, if an individual is angry or rushed the recipe may not turn out right. </p>
<p>These next cooking tips are about ingredients. There are many different kinds of flour, and they are not all the same. Wheat flour is important for all yeast breads. Bread flour works for yeast loaves, however put it in yeast bread and it will turn into a heavy cake. Cake flour is very fine. All purpose flour can be used for most any baking. Bleached and unbleached flours can be used interchangeably. Make sure to store flour in an airtight container, in a spot that cool and dry for up to six months. </p>
<p>Baking powder and baking soda are not interchangeable. Baking powder is a combination of baking soda and an acid. Its leavening power works when mixed with wet ingredients and then baked into the oven. Baking soda is sodium bicarbonate. When it mixes with an acid ingredient like buttermilk, yogurt or molasses, it makes carbon dioxide bubbles that make baked goods light and airy. </p>
<p>Cooking tips for handling chocolate are important. First there are different types of chocolate. Unsweetened chocolate is chocolate liquor that has at least fifty percent cocoa butter and no added sugar. Various amounts of sugar added create bittersweet, semisweet, and dark chocolate. Milk chocolate is dried milk powder, cocoa butter and added sugar. White chocolate is made with cocoa butter instead of chocolate liquor. Unsweetened cocoa is made from chocolate liquor with seventy five percent cocoa butter removed and then dried and ground into a paste. When melting chocolate it is easy to burn, so always melt it over very low heat. Individuals can choose the double boiler method, the direct heat method, or the microwave oven method. </p>
